It is in the Tenuta Ficuzza, in Piana degli Albanesi, that 700 comes to life, a sparkling wine, made from Chardonnay and Pinot Noir grapes. The ‘700’ indicates the altitude of the vineyards.
The 2015 harvest has a dense and persistent effervescence, with a multifaceted aromatics. Not the usual scent of yeast or bread crust, but predominantly yellow fruit, along with wild flowers and only towards the end, faint nuances of brioche. In the mouth, the wine does not lack vigor and turns slowly into the fresh air driven by the bubbles and not by excessive acidity.

From left to top and continuing clockwise: white prawn, almond milk and ginger; anchovies, lemon, oil emulsion and ragusano DOP; breaded mackerel with toasted sesame and red salmoriglio; carpaccio of cernia bloody mary (tomato, celery, vodka, black pepper and Tabasco); sea urchin, oil, lemon and parsley); oyster with pistachio water and puffed pork rind; ricotta with lemon, red prawn and caviar; scampi with the sauce from its coral; yogurt and mint grouper tartare.
