It is on the table the new menu of Banchi. «It is an Autumn menu since the colours of the dishes, yellow, green and earth – Peppe Cannistrà explains – a total immersion in the season, proposing once again dishes from the tradition and updating in the ingredients those born during the summer season like, for example, bread and onion that become bread, onion and tomato, obviously, they are cherry tomatoes, signed by Sultano.
«It happens the same to the green spaghettone, a Ragusa’s speciality dop and tartare of red tuna that changes in spaghettone butter and anchovies, potato and lemon sauce, and parsley pesto.
«Autumn brings also two typical dishes like boiled beef and barbecued Aia Gaia chicken with potatoes.
«To be noticed, too, a dessert: cooked rice in milk, caramel ice cream and bread foam, which reminds of the informal old breakfast, bread soup with milk».
