It is born from the selection of Carricante (90%) and Catarratto grapes (10%), from vines that are between 30 and 100 years old. In the districts of Santo Spirito and Possopisciaro, on the North side of the Etna. It is born from grape harvest by hand, with following fermentation and aging in stainless steel tanks for some months and finishing with the aging in bottle for more than six months. Straw yellow color, it emanates smells that remind of white flowers, Sicilian lemons, peppermint. In the mouth, citrus flavours prevail with a defined sapid-volcanic note. The sustained minerality guarantees freshness and pleasure. To be tasted at I Banchi paired with a terrine of pumpkin and blue fish.
