Let us introduce you to Mortadella Favola, Gran Riserva rind, in other words, name, surname and lineage of a first-rate mortadella, produced by Marcello Palmieri and adopted at I Banchi. Why this choice? Because it uses the shoulder of heavy Italian pork from PDO farms in Parma and San Daniele and is prepared with spices, natural flavours, acacia honey and sweet Cervia salt. But mostly because it is certified: gluten-free, free of allergens, glutamate, added polyphosphates, lactose, milk proteins and derived ingredients or containing GMOs.
This mortadella is respectful of celiacs, worthy of being sliced for the charcuterie platters and pizzas of our bakery and cuisine or, even more simply, to fill the organic bread of I Banchi.
