Summer soup with Cosaruciaro beans

The Cosaruciaro bean is a typical product of Scicli’s countryside. It’s a white bean with a black “badda”, which is a spot that looks like an eye. We mix it with other seasonal vegetables to create a tasty and fresh vegetarian dish for two people.
Mattia, the sommelier dei Banchi, pairs it with Jazz 2016, Frappato and Nero d’Avola by Paolo Calì who bravely cultivates vineyards in Vittoria on antediluvian beaches. Mattia describes it as «a fresh, elegant wine, very rich in aromatic notes».
