Top Italy 2021: Testa Conserve mackerel Panini

 

The Testa Conserve mackerel sandwich, prepared by Peppe Cannistrà at I Banchi, conquers the eleventh place in the Low-Cost ranking of 50 Top Italy 2021. A seafood Panini, with mackerel caught by the Testa family, fishermen in Sicily since 1800, is made even tastier in this version by I Banchi – the bakery with a kitchen by Ciccio Sultano and Peppe Cannistrà, in Ibla. Along with the Testa Conserve mackerel, the filling includes dop Ragusano cheese (semi-matured), sliced orange, celery hearts and a mackerel-canned oil and black olive emulsion.
