Among the new autumn dishes of I Banchi, the terrine of yellow squash, bluefish and bergamot mint stands out.
Peppe Cannistrà tells us more: «the fresh mackerel is first salted, then smoked and, finally, cooked for a few minutes in the oven to obtain a particular texture and consistency. The fish so treated is then placed on a yellow pumpkin puree cooked in foil and seasoned with Ciccio Sultano’s capuliato tomato, an emulsion of oil and bottarga, and finished with bergamot mint jelly, that adds freshness and citrus notes».
The mackerel terrine pairs perfectly with Feudo Maccari’s Family and friends 2020, a well-structured Grillo produced in the Val di Noto using the sapling (ad alberello) farming system. The wine reveals a lively character, fresh, mineral, savoury, featuring a complex bouquet.
